chicken afritada


ingredients:

1 whole chicken (cut into serving size)
1 med carrots (diagonal sliced)
1 big potato (quartered n sliced)
1 med bellpepper (qurtered n sliced)
1 pouch del monte tomato sauce
6 cloves garlic (finely minced)
1 med onion (sliced)1/2 cup vinegar
3 tbsp fish sauce
salt and pepper to taste

procedures:

boil chicken and potatoes with half cup of vinegar, half of the minced garlic, half cup water, 3tbsp fish sauce and ground pepper for about 10 minutes.. (i join potatoes while boiling the chicken coz halfdone of it doesnt taste good or i fry it first).. set aside.. saute garlic and onions, add the preboiled chicken.. pour on the tomato sauce and let boil.. add bellpeppers and carrots and add a lil amount of salt.. simmer for 5 minutes..


serve with rice..

fermented rice delicacy (burong isda)


ingredients:

1 cup fermented rice (buro)
3 pcs tomatoes (chopped)
1 thumbsize ginger (julienne)
1 small onion (sliced)
3 cloves garlic (minced)
1 tbsp oil
1/2 cup water

eggplant (fried/boiled)

mustasa

fish (well cleaned)

procedures:

fry fish..

fry eggplant..

saute ginger till the air fills with its aroma.. garlic till golden brown.. onion till translucent.. tomatoes till meat separates from skin, add half cup water to avoid from drying.. pour the fermented rice and cook for about 7 minutes.. keep tossing till cook..

serve with fried dishes, fried or boiled eggplant and/or ampalaya or mustasa..

tilapia in black beans


ingredients:
4 pcs tilapia (cleaned)
1 med ginger (julienne)
200 g tomatoes (chopped)
1 med onion (sliced)
3 cloves garlic (minced)
1 cup black beans
1/2 cup water
1 tbsp cooking oil

procedures:
saute ginger (till the aroma comes out), garlic (golden brown), onions (translucent) tomatoes (till meat separates from its skin) and black beans.. add halp cup of water and tilapia and bring to a boil.. taste first before adding salt coz black beans are already salted..

serve with rice..

must-try.. eggplant omelet

ingredients:

3 pcs eggplant (boiled/grilled/peeled)
2 med onions (chopped)
2 eggs
salt and pepper

procedures:

boil or grill the eggplant till cook.. (grilled is much better).. peel the skin.. using a fork open the eggplant for the mixture to have space.. on the other hand, beat 2 eggs and chopped onions, mix together and put salt and pepper to taste.. drop the eggplant and let the mixture cover the eggplant.. fry.. add a spoonfull of the mixture while frying to have more flavors.. fry the other side also..

sauteed green beans

simple vegetable recipe's are iresistable
ingredients:
bunch of green beans (diagonal sliced)
100 g pork (sliced strips)
3 pcs tomatoes (chopped)
1 sm onion (sliced)
3 cloves garlic (minced)
2-3 tbsp fish paste
1 tbsp cooking oil
pepper
1/2 cup water
msg (optional)
procedures:
saute garlic, onions and tomatoes till golden brown, translucent and fine.. add fish paste and pork and simmer for 3 minutes.. add the green beans and season with ground pepper and simmer till half done..
serve with fried dishes..

my version of chowrice

my version of chowking's chow rice and shanghai rolls..
ingredients:
left over rice
100 g ground pork
3 tbsp soy sauce
bunch of kangkong (thinly sliced)
1 sm carrot (chopped)
1 ajinomoto ginisa mix
1 tbsp cooking oil
1 sm onion (chopped)
3 cloves garlic (minced)
procedures:
saute garlic and onion until golden brown and translucent respectively.. add ground pork and soy sauce and simmer for 3 minutes.. add carrots and kangkong and simmer for another 3 minutes.. add the left over rice and toss for 5 minutes.. season with aji-ginisa..
best with shanghai rolls..

fried chicken (neck)

another street food that i crave :D.. fried leeg..

ingredients
1 kg chicken neck (well cleaned)
5 cloves garlic (minced)
1/2 cup vinegar
salt and pepper
msg (optional)

dip
1/2 cup vinegar
2 tbsp fish sauce
1 sm onion (chopped)
2 cloves garlic (minced)
2 pcs hot chilli (chopped)
salt and pepper

procedure:
place the chicken neck in a wok, combine all the ingredients together and mix well.. stand for about half an hour for the chicken neck to absorb the flavors..

cover with all purpose flour.. fry..

best with chilivinegarlic w/ onions...

sauteed cabbage

ingredients:

1 med cabbage (thinly sliced)
100 g pork (thinly sliced)
2 tbsp fish sauce
1 sm onion (sliced)
2 cloves garlic
1/2 cup water
salt and pepper



procedures:

saute garlic and onions.. add fish sauce, pork and half cup water and simmer till tender.. add the cabbage and season with salt and pepper, cook for 3 minutes or till cabbage is half done.. (make sure not to overcook)



serve with fried fish..

pork hamonado

ingredients:
500 g pork (skinless)
300 ml pineapple juice
2-3 tbsp
1/2 cup sugar
1/2 tsp salt
pineapple rings (i run out of it) :(

procedures:
in a wok, combine pineapple juice, sugar, salt.. put the pork and cook till meat is tender for about 30-40 minutes.. transfer to a bowl and add pineapple rings..

serve with rice..

raddish sauthei


ilove veggies
ingredients:

500 g raddish (peeled/thinly sliced)
200 g ground pork
3-4 pcs tomatoes (sliced)
2 tbsp fish paste or fish sauce
1/2 cup water
some pork cracklings (optional)

procedure:

in a heated pan, saute garlic, onions and fish paste for a minute.. also the tomatoes, add a little amount of water to avoid it from drying ( make sure that the fish paste is cook first before adding tomatoes coz uncook fish paste in dishes doesnt taste quite good) .. stir with the veggies and simmer for 3-5 minutes or till the veggies are well done but not overcook.. just add the cracklings on top.. adjust seasonings according to your likings.. (i dint put salt anymore coz fish paste and crackling are salty)..

best with fried fish or any fried dishes..

crab in misua N patola


ingredients:

700 g crab
2 packs misua
2 pcs patola (thinly sliced)
1 med onion (sliced)
2 cloves garlic
1tbsp oil
4-5 cups water
salt and pepper

procedures:

heat pan, saute garlic and onions in a tablespoon oil.. add water or broth and bring to a boil.. drop the crabs and simmer for 3-5minutes.. add the patola and misua noodle and simmer for another minute or two.. season with salt and pepper.. do not overcook..
serve hot..

sardines with camias

ingredients
1 can mackerel sardines
1 sm onion (sliced)
2 cloves garlic (minced)
10 pcs camias (chopped/whole)
1 tbsp cooking oil
1/2 cup water

procedures:
saute garlic and onions in a tbsp of oil.. add half cup of water and camias and bring to boil.. stir with the canned mackerel and simmer for some minutes.. season with salt and pepper..

sippo egg


one of the best foods ive tried..
ingredients:
20 pcs quail eggs (hard boiled/peeled)
200 g green peas
2 med carrot (small cubes)
300 g ham (small cubes)
2 med turnips (singkamas) (small cubes)
1 pouch nestle cream
1 pouch cream of mushroom (use half of d pouch)
1/2 tsp salt
2 tbsp butter
1 tsp cooking oil
1 med onion (chopped)

procedures:
saute onions using a tsp of cooking oil and butter till translucent.. add the ham (cook for a minute), turnips (a minute again), carrots (another minute), peas and toss for 3-5 minutes.. stir with the nestle all purpose cream and cream of mushroom and cook till the sauce is heavy in consistency.. add the quail eggs..

serve hot.. and with rice..

turbo chicken

ingredients:
1 pc whole chicken
200 g pine apple juice/soda
1/2 cup sugar
1/2 cup soy sauce
1/2 tsp salt
2 tbsp butter

procedures:
marinate the chicken using all the ingredients.. stand for about an hour..
place chicken in a turbo broiler and cook for about an hour.. (pour the marinated sauce over the chicken every after 15 minutes..)

serve hot..
